Excellent organic flours for the doughs, elastic and soft thanks to the double leavening with reduced quantities of brewer's yeast, as is the custom among Naples bakers. It is no coincidence that Santarpia bread, fragrant and crunchy, is among the best prepared in Florence's pizzerias.
