Take a drive out to the Columbia River Gorge and hike to the top of the waterfall.

The Columbia Gorge National Scenic area is a MUST SEE, then have a microbrew in Hood River, watch the sailboarders on the river, then up to Mt Hood to the Lodge, and back to Portland via the town of Sandy.

One of the highest and most beautiful waterfalls in the country, it's an easy 30-40 minute drive from downtown Portland, so long as you avoid rush hour!
