Kayaking Weedon Island
If you like kayaking, there's a beautiful trail through the mangroves of Weedon Island. It's about 3 hours of paddling, some of it in open water. This needs to be timed right. You'll need a high-tide, and not much wind for the open portion back, but it's one of the best kayak trails to explore. Kayak rentals are offered by Sweetwater Kayaks right at Weedon Island.

Into theme parks? Busch Gardens is about 45 minutes away. Disney is about an hour and a half to two hours away. Tampa's Lowry Park Zoo has a few small rides for little children, and only about half an hour away.
